Friday around 11 am I was sitting in our temporary studio writing this newsletter. I was five paragraphs in describing how impatient I was to move into our house and how the week had felt like a blur. Then I got a call from Marco from upstairs, our sale had recorded and we could take possession at noon.
We frantically threw the pets in the car and piled everything else on top of their carriers. Marco took calls as we drove across town and we made it to our new home by 12:15. Before I closed my computer I deleted everything I wrote because it was instantly irrelevant. We were finally in and I was nothing but excited.
I had the intention of writing about how the first night was but we won’t have WiFi until Monday making things challenging. Plus I haven’t stopped organizing and nesting. I have no time for anything else! Below is a really great Wing It Recipe for you and I’ll do a full recap next week. Talk to you then!
Watermelon, Olives, and Feta
This recipe is for summer snacking. It’s a lovely balance of sweet, salty, and juicy flavors. No need for measurements, just wing it.
If you remember, pop your watermelon in the refrigerator overnight so it is COLD. Then cube it up and add it to a bowl. Squeeze a generous amount of lime juice from a few limes over the cubed melon and sprinkle them with salt. Go for fine sea salt, flaky Maldon salt, or fleur de sel. Something that feels nice in the mouth if it doesn’t dissolve fully.
Add some olives to the bowl. Any kind will work, castelvetrano is my favorite, but make sure the pits are removed. Crumble or cube some feta and add it to the bowl. I used jalapeno feta from the farmers’ market and loved the subtle spice. You can add a little bit of minced jalapeno for some heat too.
Eat it right away or pop it in the fridge for a few minutes to get really cold. 🍉

The first thing I set up in the kitchen was my spice drawer. I have sung my praises about these clear drawer organizers before and I couldn’t wait to whip them out and get the spices organized. If you have the space for a spice drawer, you need them! They also work wonderfully for organizing medicine and other bottled items.
