It is no secret that I love ground lamb. A while back, in a Weekly Recap, I wrote all about my love for ground lamb and how we need to eat more lamb. It’s not very gamey but it has a deeper and more earthy flavor than beef. It pairs well with warming spices (think cumin, coriander, and cinnamon) which are my favorite for creating a super comforting meal. Lamb can also go the opposite way and pair with bright crisp ingredients like fresh herbs, lots of acids, crunchy vegetables, and cool yogurt. Today we are making burgers with ground lamb and topping them with tzatziki and fennel slaw. This keeps them light and refreshing for hot summer dinners and not too heavy. Today’s tzatziki can be made in advance, the fennel slaw can be made in advance, and the burgers can be shaped in advance! A great meal to prep ahead of time and throw together quickly for dinner or guests. Let’s jump in…
