It’s February and as promised I am back with a new positive outlook and I am stoked to share today's recipe! We are making Baked Rigatoni which has been my winter savior. I started working on this recipe when I was sad. I was having deep cravings for something warm, flavorful, cheesy, and comforting. This checked all the boxes for me, I wanted to eat it every other week, and I did end up making it every other week. In fact, I’m eating cold leftovers as I type this and am still loving it. This is the perfect Sunday afternoon project composed of three parts but none of them are too challenging. I have kept everything simple and kept the first half of the cooking in one pan. Everyone will be happy when this hits the table, your house will smell heavenly, and this recipe is a warm hug from me when you need some extra love in your life. Let’s jump in!
