This is our first breakfast recipe! I have a love hate relationship with breakfast. I love every breakfast food item a tremendous amount but I hate eating in the morning. Most days I have my first meal between 11 am - 1 pm. This is my loose version of intermittent fasting and that’s just the way I have been for years. So I, unfortunately, miss a lot of breakfasts at restaurants and when I make breakfast at home it is just for Marco. Marco is the opposite of me and wakes up starving. He’s like a toddler going through a growth spurt running into the kitchen to eat the first thing he can get his hands on. I don’t understand him. Editor note: this is factually incorrect.
I also dislike that traditional breakfast items are limited to only being consumed in the morning. When I do eat my first meal of the day, in the early afternoon, I often go for some type of egg dish. Simple scrambled eggs, breakfast sandies, breakfast burritos, I’m always down for cottage cheese…the list goes on. Let’s not forget about breakfast for dinner. The ultimate hack for when cooking seems impossible. Breakfast is good any time of day!
Anyways, when we have house guests, who usually always eat breakfast, this is the go-to meal I prepare for them. Jammy Eggs, Roasted Potatoes, and Bacon with Herbs, Acid, and Chilis. Everything comes together while the potatoes roast, the flavors are traditional with a little twist, and it looks beautiful. It is a crowd-pleaser that I can guarantee you and your guests will enjoy.
