I would be remiss if I sent out these Easy Summer Grilling recipes and we did not grill a single ear of corn! That and hotdogs are my quintessential summer grilling items. Grilled corn is great to eat on its own. My favorite topping is butter, chipotle chili flakes, and lime juice. Grilled corn cut off the cob makes a wonderful summer salad…but it is even better as a pasta salad. Say hello to Grilled Corn Pasta Salad!

In my ideal world, pasta salads are 2/3 salad and 1/3 pasta, the pasta is always firm and never ever mushy, and vinegar-based dressing over mayo any day. It should be refreshing, a little comforting, and each bite should excite you. This pasta salad checks all those boxes for me. Inspired by elote and Mexican flavors, it is loaded with smoky grilled veggies, fresh crisp cilantro, a little cotija cheese, and dressed with lime juice and olive oil. Today’s recipe serves a crowd, it’s party size. Make sure to half it for a normal weeknight meal.
